Eggplant Salad

Food plays a large role in all of Kasma's trips to Thailand. For our very first dinner we eat at one of our very favorite restaurants, My Choice on Sukhumvit Soi 36 in Bangkok. Most meals are eaten family style, with Kasma ordering 4 to 6 dishes to be shared among the trip members. This is a roasted eggplant salad and is usually very, very hot – perhaps a 5 or a 6 on a scale of 1 to 10. You must be able to eat spicy food to go on one of Kasma's trips; and you must eat just about everything, including pork, chicken, beef, fish and shell fish. Innards and insects are optional!
