Pork leg is stewed from the hoof up to the shoulder, skin on, for several hours until wonderfully tender and then served over plain rice with some pickled mustard greens on the side. She has been selling her food in the same location for at least 3 or 4 years that I can remember. We manage to eat here a couple times each year. In the U.S., Kasma can only get the pork leg with skin on from Asian butchers. It is said that the Thai people use every bit of a pig “except the squeal.” If they could eat that, they would! |
